Soups on...

As the weather turns cooler and Eric is off to school this means one thing! I can make anything I want and include as many vegetables as I want and I won't get that turned up nose and groan of Mom seriously! The day I moved him in I put everything for Chicken Tortilla soup in the crock pot and off we went. Just think beans and vegetables and Joe and I at dinner and no comments or complaints.

Since then we have had Beef Stew and Taco Soup. My lunch time today was googling more soup and stew crock pot meals. I can't wait to try Chicken Pot Pie soup, Kielbasa and tomatoes and spinach, Slow cooker BBQ Chicken soup and all the others I found.

For the first time in a long time its just Joe and I at home regularly. Its really hard to get used to this after 25 years. But at least he eats what I make, doesn't complain when we eat the soup a second night or that they are filled with stuff that may actually be healthy!
